Nearly 5 years ago, Jordan Hereford opened the doors of Appleton’s Ambassador cocktail lounge with the drive to provide downtown Appleton with an option for providing prohibition and modern era spirits and cocktails. Ambassador established itself in a short period of time as one the most innovative and eclectic establishment in the historic downtown entertainment district. His background started at the age of 13 washing dishes in the kitchen of a restaurant in Michigan’s Upper Peninsula. Throughout his career in the service industry, he has experienced all levels of restaurant operation encompassing both the front and back.
In recent years of travelling domestically and abroad with his wife Amanda, his passion for quality cuisine and stiff drinks set him on the path to wanting to leave his own mark in the food cocktail world. After partnering with Chef Ryan Sherman, the opportunity presented itself to share his experiences with those who share the same passions in life.
Starting his career dishwashing and doing kitchen prep at a supper club in Hortonville, Wisconsin, Ryan furthered his studies at the University of Wisconsin Eau Claire where he learned his passions in life came from the sights, sounds and flavours in a kitchen. After working years in the front and back of the house, he knew his calling was preparing culinary experiences for others.
Ryan trained in the kitchens of the Greater Fox Valley and Green Bay area for 15 years, doing everything from bar and grill, catering, and fine dining. His ambitions landed him an appearance on the Food Network, which allowed him to showcase his skills to the masses. ( #FoodNetworkChampion )
After winning a national competition, Ryan desired to make something his own. Upon partnering with Jordan, who shared the same beliefs in food, art, and dining experience, the concept of Field and Fire was born.
